Yeah I only have one kick drum and one pedal too. I like learning to do fast stuff (eg. sextuplets) with on pedal. Its so much more fun! Then wen i do try it on double pedal, its so much easier.
play double pedal alot then go back 2 playing one pedal.  your one pedal playin becomes alotbetter.
Yeah I do play double sometimes... but i find i use it to cheat a bit. Like i use it to do stuff i can normally do with one foot. It makes me feel kinda lazy. But I do want to get some more double pedals tho to work on my left foot.

even with double pedals you can still play one. thats why they make 2 pedals instead of just one.  if u dont wont 2 play double then  play one.

I have no problem with the hats being far away, I am using an Iron Cobra HH905 Leverglide Hihat and I have double bassdrums with Iron Cobra Flexiglide single pedals and they work fine together, all you have to do is fold away the Hihat legs and get a clamp that holds the middle of the hat stand and clamps it to the top area of the lrft bassdrums hoop, easy Pleased

Have both capabilities.

If the stage is large enough, I always go with the double kick drum set up.

If the stage is small, I'll go with a single kick and double pedal. I'll also double up/stack cymbals on fewer stands and eliminate one floor tom.
